Could my plating have been a bit better? Sure, but I don’t mind because I mix my food before I eat anyway. I hadn’t meal prepped in a while, so I was surprised with how much food this recipe yielded. Highlights of the meal
While I enjoyed the whole meal, I want to highlight two ingredients of the meal in particular: The cilantro lime rice and the chipotle chicken. The rice served as a lively base to this meal. Each bite was guaranteed to have the perfect amount of citrus as long as it included some of the rice. I appreciate when a meal is thoroughly seasoned and delivers consistently throughout the meal. So the chipotle chicken ticked several boxes for me there. the subtle heat I got from the chicken helped to keep things interesting, which is important when you eat the same thing everyday for a week.
How to Improve this Meal
I’d be nitpicking if I were to say anything needed to be improved. It ultimately comes down to your taste and how you like your food to be served. A nice addition, if you’re someone who likes fruit, would be to add some diced pineapple. I actually think it goes very well with beef.. There’s really not much else to improve on. I also made too much rice so it’s no surprise I had trouble losing weight that week. I eyeballed most of the ingredients when I really should have used a scale. If you’re meal prepping for weight management, I recommend getting a digital food scale.
